While there are usage metrics to show how many times reports were opened, is there a way to see how many times a dataset was used?
We are deploying datasets then building our reports as "thin" reports off the datasets in Power BI.
What are people doing to monitor data set usage as opposed to individual report usage?

You will need to use Power BI APIs to go deeper in details.
Exemple : https://learn.microsoft.com/en-us/rest/api/power-bi/datasets
You can as well create your own reports in Power BI desktop out of all available APIs.

Do you happen to know of any other ways to connect and view the data?
Other ways could be to be Tenant Admin and have premium license. Not sure if that was your question!

I do have a Premium license.
I'm looking at some of their options for the usage reporting there, but I don't see a way to get any details on which parts of the dataset are used.
Can I pull specific usage details from the dataset (which measures are used more often, etc) via that API?

Yes you can, this API
https://learn.microsoft.com/en-us/rest/api/power-bi/admin/get-activity-events
can get you all Activity types including "EditDataset". You just need to extract it in json or csv file and build your report. Note you need to be Power BI Admin of the tenant to use the API.

To use this API I need to use the Power BI API data call and customize it, there isn't a data set connector that already exists or a template app just to consume these APIs?
You can use Powershell to run the API, extract it into a jason or csv file and then build a report with your Power BI desktop
