I created a Desktop report and used an Excel file on OneDrive, the refresh works fine.
I uploaded it to Service (online) which created a Semantic file along with the report. The report comes up fine but it does not bring up the latest/updated data from Excel. When I select "Refresh" in Semantic, it fails and says "At least one data source is missing credentials, go to this dataset's settings page and enter credentials for all data sources"
When I go to "Manage Connections and Gateways", select a connection and then select settings; all fields in Settings are greyed out. The "Connection name" fileds has the full path of the Excel file as "C:\MyUser\OneDrive\MyReports\MyReportName.xlsx" and the "Full Path" is the same. The Authentication panel is enabled but the dropdown in method has only "WIndows without impersonation".
The "Manage Connections and Gateways" shows Connection Type as "File".

In Power BI Service, go to the workspace with the dataset, then navigate to Settings > Datasets. Ensure all data source credentials are correct and up to date. Update any missing or incorrect credentials and try refreshing again.
Use the web URL for the OneDrive file instead of the local file path. This helps avoid local path issues. Open your Power BI Desktop report, go to Transform Data > Data Source Settings, click Change Source, and enter the web URL.
If you are utilizing a gateway, please ensure it is correctly configured and operational. Navigate to Manage Connections and Gateways in the Power BI Service to verify the gateway settings. Clearing the cache in Power BI Desktop can sometimes resolve data refresh issues. Go to File > Options and settings > Options > Data Load and select Clear cache. Recreating the report from scratch might also help identify issues with the original file.

I've managed to solve the issue @v-kpoloju-msft thank you very much 😍👏 for the pointers & links to references.
What worked for me is that, I have uploaded my excel file to SharePoint Documents folder and then I used SharePoint folder connector in Power BI, pointed it to the root folder and pressed on transform button to load all the contents of the sharepoint site.
This video explains in details The best way to connect to a SharePoint Folder to speed up your Excel and Power BI data refresh , and if you have another table or sharepoint list that you would like to connect to your current report, you can use append query as new function in power query editor.
The thing is this step might require complete restructure of your visuals including DAX quries assuming you have one, good thing about quires is that you can move them to the new table and they don't require much work.

After thoroughly reviewing the details you provided, I have identified few workarounds that may help resolve the issue. Please follow these steps:
To re add the Excel file in Power BI Desktop, open your Power BI Desktop report and navigate to Transform Data > Data Source Settings. Click Change Source and choose either SharePoint Folder or OneDrive for Business, depending on where your file is stored. Please enter the correct OneDrive URL, apply the changes, refresh the report, and then save and publish it again to Power BI Service. This will create a new semantic model referencing the OneDrive file.
Go to Power BI Service. Navigate to Settings > Manage Connections and Gateways. Your Connection Type should now show as "SharePoint" instead of "File." If prompted, enter your Microsoft credentials OAuth2 is recommended.
In Power BI Service, go to Datasets > Settings. Under Data source credentials, make sure credentials are correctly set. Enable Scheduled Refresh and test a refresh.

I also have same issue, please let me know when you find solution. I've tried SharePoint folder method but combines all the files in that site, which is unnecessary.
