Can we monitor the end-user usage of a sql-endpoint from Excel using the ActivityEvent API (https://learn.microsoft.com/en-us/rest/api/power-bi/admin/get-activity-events?tryIt=true&source=docs...)?
Example, can we see if end user aaa.bbb connected to the sql end-point from Excel using the information retrieved from the API above?

As a far as I can see, it is not currently possible to use the audit logs to be able to view the level of detail that you are looking for.
