Instead of creating folders within a document library, I want to utilize Metadata. When I load the Document Library in Power Query, the metadata fields aren't showing and this is forcing me to create subfolders which I was hoping to avoid.
Any tips or tricks for using metadata?
You can connect to it using the SP List connector or OData connector instead, which has all the metadata, then join it to the file contents (if you need the file contents). The list connector does work with libraries, they're essentially very similar architecturally - it's just that their "item" is a file instead of a data row.

If you are connecting to a SharePoint Online Folder (using SharePoint.Contents or SharePoint.Files) and want to include additional columns from the Document Library, I answered a similar question recently here:
I used OData.Feed to access the additional columns and joined with the SharePoint.Contents query.
