Currently using Power BI REST API to query datasources and get connection details. datasource.connectionDetails is currently returning the snowflake server and the warehouse being used.

I think the only way to reach the schema of the data model is with the scanner api. Building a script with 4 requests that will show dataset and the tables/columns. You can read more about it here:

Otherwise you can't reach tables structure. If you where asking about getting the data and you know the structure, you might want to check "ExecuteQueries" under dataset requests of the Power Bi Rest API doc.
