I haven’t found an option to edit Power BI dataset parameter in Excel. It should haven’t been supported. You may consider submitting need in Power BI Ideas where the product group collects suggestions from users. Here is the link of Power BI Ideas: Ideas (powerbi.com).
For parameter defined in Power Query Editor(Transform Data) of Power BI Desktop, you could edit it by going to the Settings page of the dataset and change the parameter there. Then, you could try reconnect to the dataset or refresh the content in Excel.
