My organization has hundreds of workspaces and I want to be able to see data across them all and build a report about usage metrics.
It's not a option:
1) To do it one workspace at the time
2) To have data only from the last 90 days
3) Static report without customization

One of the option you might consider is using Power BI workspace with utilization of Azure Log Analytics.
It's a solution, which takes time to implement and can be costy if you have high traffic. On the other hand:
You can see additional data about your datasets/reports in your workspaces. For example, which Dataset is demanding in terms of performance, which DAX query takes the most performance etc. You can also save the logs for ages and use long-history report if needed.
It's definitely big step ahead from default usage metrics but for an architecture with lot of workspaces and content, it makes sense.
