Is there any way to find out how many dataflows you have?

Another quick one. It seems that dataflows are always the thing that causes issues when ever something new happens. Piplines. Premium gen 2 etc.

Is there a quick way of generating a list of data flows and what workspaces they are in?

and make friends with your tenant admin - you will need their help big time.

Use the Power BI API and/or the audit  API to collect that data. You will need tenant admin level access.

I dont understand why they have made this so difficult and why its set up under another teams remit. Ill see if I can make sense of that document. Thank you
