I would like to know if it is possible to access the tables used by the Fabric Metrics App to store a history of data in another storage.
Any help would be appreciated.

You need to write a PowerShell script using these APIs
https://learn.microsoft.com/en-us/rest/api/power-bi/
To extract and save the logs in csv or JSON format somewhere then use Power BI desktop to connect to them files and build reports

Yes you can use PowerShell and Power BI Rest APIs to extract and save the logs in JSON or csv formats.
