We need to setup a Gateway Cluster and include a data source that has both SQL (2016) and Oracle (12c) servers. What all needs to be setup, most importantly for oracle? Do I need to install the oracle (which bit?) client on the Gateway server? Are there any special configurations?

SQL didn't cause us any headaches but Oracle did.
Firstly we installed the Orcale Client onto the server with the gateway installed, which was easy enough. We also needed to install ODAC onto the gateway server. I believe it was the x64 version.
After that was complete we had to update the TNSNAMES.ORA file with all the connection details. We found that in the Oracle\product\<version number>\client_1_x64\network\admin\ folder. Yours might be a little different but see if you can locate the network\admin\ folder at least.
