A company carried out a pentest report and pointed out as a weakness an error message showing the variable Edm.String in the return of a Report Server API, is there any way to customize or parameterize the APIs so that generic errors are returned?

No I don't believe there is any way to customize the error messages. But Edm.String is not an variable it's a data type. So the error message is already quite generic, it's just saying that the string 'name' that was passed in was not recognised.
If this is important for you then you would need to raise a support ticket with Microsoft to see if they would consider changing this.
