In our organization we have a users who are allowed to develop power bi dashboards for projects. We want to remove their access from being able to Get Data from SharePoint. See the below image of the Get Data window where SharePoint options are displayed. We do not want users to query any data from sharepoint when building power bi reports.

Not currently possible. It's also futile as they can download the files from the Sharepoint and the use the regular Folder connector.

Currently, Power BI doesn’t offer a built-in feature to disable or hide specific data connectors like SharePoint as mentioned by @lbendlin .
While direct restriction isn’t possible, you can manage access by setting SharePoint permissions to block users from viewing or downloading data, causing Power BI queries to fail due to lack of access. Providing controlled datasets in Power BI Service can guide users to approved data sources. Monitoring user activity with Power BI Audit Logs via Microsoft Purview or the Office 365 Admin Center helps track unauthorized data pull attempts.
If this type of restriction is crucial for your organization, we recommend submitting a feature request or voting for an existing one at Fabric Ideas. Microsoft continuously evaluates community suggestions to improve the platform.
While the current setup may not fully block SharePoint access within Power BI, a combination of SharePoint permissions, dataflows, and governance monitoring can help you achieve better control.
