I’m trying to establish whether the PBI Impala datasource supports the use of a SQL statement.
The UI doesn’t appear to provide an option to specify SQL, but wondering if it’s possible via M syntax in the advanced editor (again no docs)
This is certainly possible via the Impala ODBC driver, so I’m wondering why not via native?

It doesn't support to write SQL statement via M or UI when using Impala connector, about this issue, you can submit a feature request in Power BI ideas forum.
