In the Power Query Editor, the Formula Bar when I click on the down arrow to get more than one line I only get 5 lines. If it is 40 or 50 lines long, it is hard to see what is going on.
How do I get to see the whole query at once?

This the limitation of PQ. In Excel, you can drag down formula bar to change the width but in PQ, default width is fixed and you need to scroll down.
The possibilities which I see (as a workaround)
1. In Formula bar, press CTRL+A to select entire formula and paste into some Notepad
2. Or open Advanced Editor to see complete formula
That is strange. It must have changed at some point in time. When I Googled it, I have seen screenshots of people with 11 lines and other people where the formula bar covers nearly the whole screen.
What you may have seen is DAX formula bar not Power Query formula bar. See below formula bar for DAX
