This is odd. I'm extracting Date Only to get a new column with just that, but it changes the dates, if time was midnight (00:00:00)

Looks like the regional format of your PC is United Kindom to show the datetime in Power BI, but I cannot reproduce it in my side when changing to the same region(Mar 2022 version in windows 10/11)
Perhaps you can consider providing more details about this issue like the Desktop version, the OS version etc.
In addition, you can try to change the region to US in Windows settings to check whether it issue still happens.
