I have an on premises gateway installed and I have added my Postgres database (on AWS RDS) as a data source. I've set up both of these via the PowerBI web service (cog/settings > manage gateways)
How do I now use this data source in either the web service or desktop version of Power BI?

Gateway is used to refresh data in Power BI Service. In your scenario, you would need to connect to PostgreSQL database in Power BI Desktop , create report there and publish the Power BI Desktop file to Power BI Service. Make sure you use same server name and database name in Power BI Desktop and gateway.
After publishing Power BI Desktop file, you can go to Settings-Datasets, find your dataset, then set schedule refresh for your dataset by using gateway.
