I am working outside of the confines of my IT department and trying to provide justification to get database access for my reports. One potential avenue that I'm exploring is requesting a non-writing role in the database (db_datareader or db_denydatawriter).
Does anyone have experience with this to know whether these roles would have a negative impact regarding my ability to pull data directly?

There was no specific role requirement mentioned for connecting to SQL. And with my test, you are able to connect to SQL server and refresh successfully with reader and owner role only.
