We'd recommend to follow this guide to implement required functionality.

The document does not describe that. It describes how to create new properties in the options pane. But nothing about the predefined ones such as title and background.

Predefined properties such as Title and Background are no available in the code of a custom visual.

We'd recommend to create your properties instead.

Do you also know whether its possible to hide predefined properties?

For example i can influence the Title by using "suppressDefaultTitle": false in my capabilities.json

But how about hiding those? So when i create my own Title property I want to avoid that Title exists twice

Other properties can not be hidden as this is not supported by API.
