My question is very basic. I have two columns (Sold date and Fruit type). I would like to write a DAX formula to express what was the % of each fruit sold in a given period (per week, per month or per year).

Please take a look at following link which about create a calculation table to store detail records based on current table:
Spread revenue across period based on start and end date, slice and dase this using different dates
After crate calculate table and build relationship to original table, you can add custom column with specific categories(week, month, year). Then you can simply use these columns and original records to create visualizations.

Thanks for your suggestion, but the solution you're suggesting doesn't answer my question. I have a column of different categories and I simply want to express % of each different category. For example, if we have 20 apples and 80 oranges sold across of a given time span, I'd like to express apple sold, as 20% and oranges at 80% for that time span.
