I thought we don't need to use ' ' for tables unless they have a space or use a number in them?

Why does the formula Copy of Product = FILTER ( 'Product', 'Product'[Color] = "Red") require them around product?

Because PRODUCT() is a DAX function and therefore a reserved word. Same reason you would have to use single quotes if you wanted to name a table 'Table'.

ahhh ok. I was wondering why but that makes sense. So it's because those words are functions. Got it.

You could name it Products instead of Product. That would work without quotes.
