Creating Summary Matrix with different subcategories for Values

Hi,

I wanted to create summary table for project, which will allow me to compare different kinds of values between years or projects, but addtionally each value should show detailed insight based on different category.
So I created testing Power BI file (showing random data for some Greenhouse project) and I achieved somehow what I want, but in static way:

So basically all rows here are Values, where Sums are direct columns from Harvests table and "|-->" are Measures (SUMX with filter=displayed type [Greenhouse Type = {Cold, Mix, Hot}, Product Type = {Fruit, Veggie}]).

Drawbacks of what I have here is that it is not dynamic, so change of Types or adding new ones is forcing me to always creating/deleting/editting measure, whenever there will be any change and also if there will be 30 categories, I will need to create 30 addtioanl measures. Second is that it just look not really nice as e.g. it is not stepped.

Do you have any ideas how I can achieve what I want? Preferable using basic Power BI functions, but if not then with any free custom visual or External Tool

The result I want to achieve is exactly how it is already on 1st image I provided, but the aim is to do it in smarter way. So to show different kind of values (cost, quanitity, e.g. transportatin cost, dibstribution cost, etc.) through years, projects, scenarios, etc., but to have some of these values divided into one kind of categories and other into other.
Based on my example/file it will be that: I want to show comparison of project A and B and show for them values of their Cost, Quanity of harvest, and amount of Fertalizer used, but because of some business reason, I want to show detailed Cost per each Greenhouse Type (Cold, Mix, Hot), but for Quanity of harvest, I am not carring about Greenhouse Type, but I want to show it per Product Type (Fruit, Veggie) and Fertalizer I want to see just total.
