I have a matrix with headers like this -
This field "ratings" is in my Column section of my matrix.
CAn I color each one individually? Ie High red, Medium Yellow, Low Green.

the real answer that worked:
Hi, not out of the box. The formatting is applied uniformly to all columns. You could apply some sort of conditional formatting to the values and have that coloring correspond to the coloring you want (gradient background of data bars). However, to achieve this you would not be able to utilize the ratings field as a column - rather, create a filtered measure for each, then put the three measures in value - then conditionally format those three. And, you could possibly achieve what you need making a custom visual with Deneb or HTML, but the effort probably isn't worth the squeeze.
You could also brute force it with shapes. It could work as long as you ensure your column widths are as wide as they need to be and will not be adjusting. In that case, you can add shapes on top of the columns and line them up neater than I did below to demo.... make sure you have the transparency turned up a bit so that you can see the column names beneath them. Then, I would group the visual with the shapes so that you can freely move it around as a unit going forward.
