Background
I'm looking to set up a SOQL query in data factory to Select Fields(All) From ADataObject Where LastModifiedDate > ADateISpecify. Unfortunately my user isn't able to do a Select Fields(All) so I have to manually write in all the fields of a SF data object to get what I need.
What I Want To Do
I'm thinking that I can query the column names from a data object first and then include it as dynamic content in the SOQL query. Has anyone done this before? What is the best practice to get the column names and then plug it into a copy data activity?

You can try the following:
Create a data pipeline, add a web activity to call the Salesforce API, and get the field names.
Create a SOQL query using the extracted fields and you can execute the query in the replication activity.

You may have to specify the API level. FIELDS(All) only works at 51+
Is it possible to set this in Fabric? In Data Factory I only see a little text box to write SOQL queries
I know it is possible to set the API version in Power Query. I have no expertise in Data Factory and don't know which API version they use there.
