When creating a connection on powerbi.com, through a on-premises gateway and Starburst Enterprise connector, I can enter optional parameters. However, I could not change these optional parameters while editing an existing connection.
Also, it turned out even though I can enter values for optional parameters, those value does not work. If my report's semantic model has values for those optional parameters (entered within Power BI Desktop), those parameters will be used. Even if it does not have, parameter values entered in powerbi.com are not picked up.
So if optional parameter does not work in connections on powerbi.com, they should not be displayed in the creating connection UI.

In Power BI Desktop, you can enter those optional parameters while importing your data. Even though you cannot edit data source settings after creation via UI (but you can edit your power query directly), those optional parameters work as expected. But in Power BI cloud, these optional parameters never kicked in. So if they don't work at all, then they should not be listed in the creating connection dialog.

Do you mean that you’re experiencing an issue where optional parameters in a custom connector are not working as expected on Power BI?
Or do you wish to edit the optional parameters already entered? As far as I can tell this doesn't seem to be directly possible in Power BI Service.
you may vote the idea and comment here to improve this feature. It is the right place for customers provide feedback about Microsoft Office products . What’s more, if a feedback is high voted there by other customers, it will be promising that Microsoft Product Team will take it into consideration when designing the next version in the future.
