When I sort by age group on the graphs it does not filter correctly, it puts ages 5-9 in the middle and not right after 0-4. I would like to turn off the sort on the graph so it just appears as the data appears in the table. Can this be done?

If you want to sort the X axis, you need to have reference columns.
Because your current 5-9 is text, you can't sort it.
In fact, the x-axis can be sorted correctly by adding indexed columns.
You can try this method:
This is my test data:
When I use this table to sort by year column, I got the result below:
It is the same quertion with you.
So I add an index column in Power Query:
And then I got the table like this:
Then you can choose the year column and select the Sort by Column:
Finally you can sort it correctly:
