I use Power BI Online and scheduled updates, however, I've noticed that the update service is not updating all tables/connections. The connections are in SQL database, through the Gateway.
The update appears as complete, without any errors, however, some tables remain without updating. Even running the update manually, the same problem occurs. You have to run it 4 or 5 times, manually, so that all the tables are updated.

Thinking out loud here:
1. You connect to a website to show current data and time? Why not just use a power query function like 'DateTime.LocalNow' .
2. Do you filter your report visuals based on that time? or even the query itself in the power query?
@SpartaBI Thanks for the answer. However, this is not the problem. I have access to the database where I make the connection, and in the database the tables are up to date. Today I was not able to update 100% of the BI tables at all.
I have a very simple table that connects to a website to capture the current date and time, to show the date and time of the last update within the visual, and even this connection, which is simple, is also not being made at times , for example, in Power BI it appears that it was updated at 15:00 hours, however, when entering the report the table shows 09:00 hours, just an example.
@jjfneto if what you say is that eventually after 4/5 tries you see all the tables updated, than it sounds to me the issue is not on the Power BI side rather those tables were just not updated in the SQL data source at the time of the first refresh. It's not the number of attemts you did, it's just that a few minutes (or whatever) passed and those tables got updated in the source and than when you refreshed the last time it's just picked up the change, but all the refeshes you did refreshed all of the tables in the Power BI dataset every time you did the refresh.
Try schedule the refresh 1/2 hour later, and anyway check what is going on in the refresh times of your SQL tables.
