Is there a way to hide pages when my report is sent out as a PDF via subscription but still have the aforementioned pages show up as visible when a user opens the report in service?

I understand you're looking to customize the content visibility based on the distribution method, specifically hiding certain pages in a PDF sent via subscription while keeping them visible in the service.
Power BI does not provide a direct feature to selectively hide pages in a report for PDF exports while keeping them visible in the Power BI service. The visibility of report pages is consistent across viewing modes to maintain report integrity and user experience.

I don't believe so.
What you can do is actually hide them in the service, but include on the visible page a Navigation Toolbar that would include the report pages you want users to be able to visit, but not be included in the subscription.
DAX is for Analysis. Power Query is for Data Modeling
