Is there a simpler and automated way to avoid creating connections for each table in a database in Power BI Service Gateway when dealing with at least 15 tables in one dashabord, and also adding credentials for automated refreshing?

THere is not an automated process for this that I am aware of. However, just to clarify I believe that you are talking about Data Sources and not the actual Gateway - you have one (or maybe a few more) gateways but you have many datasources. And, you do have to set up each Data Source for each table that you are connecting to in each database. SO, in your case, this does mean 15 data sources.
The good news is that this is only a one-time thing.
As for refreshing, I strongly suggest a service account that has READ ONLY access to everything in that database and that way when the data source is setup you use that account for the refreshing. And, you can then allow various users to use the Data Source and not have to worry about who has rights to which table(s) in which database(s).
