I'm trying the Dynamics Finance team now to ask if there's some best practice we're missing, since this seems pretty bad.

Not really a solution - but I ended up just bypassing the API via Power BI (we have a seperate integreation that pulls things down into a SQL Server, just ended up pulling the additional fields via that).

The error appears to be an issue that it can no longer connect to your CRM server.
I would chat to the person who looks after your CRM server and ask them if anything has changed.
Everyone says, no.
I can connect from Power BI Desktop (Whether on our VPN, or not)
I cannot connect from the Power BI service, whether attempting to utilize our Gateway, or not.
This might have to be a MS ticket.
