After owner of a dataflow has left the company, this dataflow is no more editable, even if I try and succeed to take over it.

First, in order to see the TAKE OVER option, you need to click the ellipsis next to the Dataflow and select Settings. If it is owned by someone else, you should now see the Take Over yellow button.
Second, there is a NEW User Voice item along these lines that requests that ownership of Dataflows be granted to Workspace Admins. Please go to this link and supply your vote:

This is not working at all, But the workaround is to export .json file and then create new using the same.
