I'm aware of the /DataSets({Id})/Model.GetData and /DataSets({Id})/Data endpoints. But is there a way or query-like language to filter the data that come from those data sets?
I've looked here and did some googling but doesn't seem like it specified or even possible.
No I don't think there is any query language like these. When you create a shared data set I think you can specify parameters for that you can pass to the data set, but I don't believe there is any way to do adhoc queries against them (its not really what they are built for)
