Not sure if this is possible but in my dataset (csv) I have a column called 'Last Date Updated' where it has date-hours-seconds so whenever the entry was made. This is not used for any calculations so it's one of the columns excluded. I would like to take the max value of that (so last time an entry was made) and store it somewhere to use in a card visual in Power BI so end user can know the time of the last data point.

What you could do is that you duplicate the table and keep only this column in it, then you click the drop down arrow on the column and click "is latest" so it filters this column to show only the latest date and you could use it in a card as you can see in the screenshots below.
