Reading SharePoint File Versions

Simple question, I am expecting the answer to be far from simple:

 

We have a file that has been in SharePoint for quite a while and we want to create a report in PBI that shows how some aspects have moved over time.  

 

The brief I've been tasked with investigating is whether it is even remotely possible, to interrogate spreadsheets that are stored in the version history and add a column within PBI that has a version date. 

 

For example if you had a spreadsheet with the following columns:

 

Risk   Title     Description     Risk level     Event Liklihood    Current Risk RAG

 

Could I then use a script or power query to look at each version and have the following:

 

Risk   Title     Description     Risk level     Event Liklihood    Current Risk RAG   Version Date

 

Thus tracking movements in Risk levels, Liklihoods and the RAG (Red Amber Green) status over time.
