Pivot table from columns to rows - changing FX table to do lookup

In Power Query I have a table that looks like the below but I want to pivot it so that the column headers become rows which will need to then repeat.

 

How can I take my existing table and pivot the header row so they become individual rows like illustrated below?

Just select USD and CAD columns and choose "Unpivot Columns"
