Hi,
I have an issue when I refresh Power query tables. When I change the Data Type to Date and then when I refresh it come back to "text".
How can I fix this?

That is the Power Pivot window in Excel, not Power Query. You should not (and often cannot) transform data in Power Pivot's window. You should use Power query. The format changer in Power Pivot is mostly a visual thing, not actually changing and validating the data type.
See here for info on creating a dynamic Date table in Power Query. You can use the same article to create a static one where you select the start and end dates.
Then load that date table into the data model, open Power Pivot, make this the Date table, and keep going.
DAX is for Analysis. Power Query is for Data Modeling
