Is there a way to prevent date columns changing date format?
I am having an issue with Power BI automatically changing the date column to mm/dd/yyyy when I want it to remain dd/mm/yyyy. I am using an Excel spreadsheet as the data source (which I have formatted as dd/mm/yyyy.

that has to do with the regional settings. You can adjust them under:
File -> Options and Settings -> Options -> Current File -> Regional Settings.
Also, you can add a regional parameter in the Changed Type function at the end like "en-GB" to keep the original meaning:
