I have raised lots of questions in Power BI community and Fabric community during the past years. The problem is I have logged into both community using my work email. I'm quitting my job next week, which means I will lost all the subscription and notifications due to the email issue. Is there a way to update the email information in my account so that I can still access all the subscriptions?

Sorry to hear that the migration didn’t happen last time. Have you tried completing the Microsoft Fabric Community Support Form? Similar requests have been successfully addressed by the admins, as seen in this thread: Change of Email Address.

Thanks. I have sent an email to community admin. However, if I remember correctly, I made a similar request four years ago when I changed the job, but no migration has happened.
