I was able to successfully mirror an Azure SQL DB wonderfully. However, I had to delete the mirror as I wanted to move the workspace it was in. After trying to mirror again in the new workspace I keep getting the below error even aftrer 24 hours of waiting. Any Suggestions?

That happened to me as well. I had to open a support ticket to have replication broken from the backend.
Awesome thanks for that, will get in touch with them. Seems crazy, but I guess this platform is still fairly new.

Here are a couple of queries you can run against the source db of the mirror that support will ask for.
SELECT * FROM sys.dm_change_feed_log_scan_sessions;
--if mirroring is actually stopped I think this table should be empty
SELECT * FROM sys.dm_change_feed_errors;
