Hi,
Currently we have some customers with the same report but different databases on our Power Bi service... this means we have a Workspace, a .pbix, a report and its dataset per customer. The report is the same across all our customers and the databases share the same structure. We would like to have 1 report published and switch the database used with a (parameter maybe?) from the application where the report is embedded instead of having N number of reports, pbix, and datasets on the service. How can we do this?

If I understand correctly, you are using Power BI Embedded.
In this case, you can use dynamic binding to set a different dataset, for a report, per embedded session.
Have a look at the following doc: Dynamic Binding
Another option would be to use a single dataset (a union of all the customers) with Row Level Security (RLS).
This will filter the dataset rows, for each end-user, to only show the relevant data.
