Waiting for a database, I am using plenty of CSV files (~1000 files of ~2 MB) stored in a SharePoint repository.
On Power Query to create a table, I use the SharePoint connector, then I combine all files of the repository and then apply data transformations.
I know that SharePoint connector is not the best performant connector but I would like to know how does the combining file process works ? Is Power Query connecting to each CSV files on SharePoint then combine, so it creates ~1000 connections or only one connection to the SharePoint repository ?

Not sure why this matters to you. But you can use tools like Fiddler to investigate the number of calls being made. At the end of the day your data content has to travel from the folder to your PC's memory. You're looking at many more than 1000 packets.
