In the Microsoft Map visual, clicking the checkbox beside an attribute named "Latitude" will automatically place that field in the visual's "Latitude" category, even though latitude is not the first category listed. Similarly for Longitude. How is this done? I'd like to similarly map fields to the proper category/measure based on name.

Most likely you shoild specify preferredTypes in capabilities.json for such data-fields.
Please use geography as a type of preferredTypes.
