You can change the alignment of values in one column at a time in "Specific Column":

Regarding the headers color, in the same menu ("Specific Column") select "Apply to header" and deselect "Apply to values" and "Apply to subtotals" and then change the color:

I found a work around for this, at least in my situation. You go to the specific column tab apply to header and values. Your values will show up as the same color as your header but if you go to cell elements you can put a conditional format on background color to remove the added color you selected within the specific column tab by changing it back to white or whatever color you want.

As some commenters have asked, there is a workaround that allows you to change the color of the header while still providing formatting to the values.

In the 'Specific Column' dropdown, toggle on "Apply to header" and "Apply to values". Choose the "Background color" you would like for your header. Choose your alignment (note: using this method it is not possible to have separate alignments for the header and values).

Next, open the 'Cell elements' dropdown. Select the same series as above and toggle on "Background color". Select the fx box underneath "Background color".

In the pop-up window, select the "Format Style" as Rules, "Apply to" Values Only. The "What field should we base this on?" should be pre-populated based upon the series you selected. The rule should be "If value is >= 0% and <= 100% then [color]". Choose the color to match the background of your matrix.

I want header and values to be right justified and am able to do that by turning on for both header and values. The problem is that I also want to change background color of JUST the header to orange. Since I have turned on both header and values, changing background color will change it for both header and values.  How do I change the background color of the header without affecting the background of the values?

I have the same problem, the colleague found a shape but we cannot apply it to the same column, column 'a' I want the header to be in 'green' the values just aligned 'center' in the other column color 'blue' and values also aligned 'center'.
I believe this is a limitation of the power bi for now
