Hi,
I understand when you create a drill through page, all the filters in the source page are automatically passed on the drill through pager. Is there a way to exclude certain filters in the drill through page?

Please try in the Drillthrough section of the Visualizations pane, set Keep all filters to Off. Then when you drill through to a visual on the source page, the temporary filters applied to the source visual aren't applied to the drillthrough target page.
Actually, Drillthrough is used to create a page in your report that focuses on a specific entity.
If you want to show all data after drill through, you could click this icon highlight in red to clear the filter but it will still exist when you drillthrough to this page next time.
If you really don't want show the specific data in the page, you may could try with Bookmark feature.
If you'd like to keep the filter applied to specific visual and keep all other visuals unfiltered, you can just duplicate the table and recreate the other visuals.
