how can i find the minimun(the first date for each item) date for each item in this tabale with dax ?

If you need this as a measure, then simply drag Item to the visual and write this measure
=MIN([date])
If you want a calculated column, then try this
=CALCULATE(min([date]),FILTER(data,data[Item]=EARLIER(data[Item])))
