Can someone please help me with creating these measures ? I am trying to find a way to calculate variances between two dates selected for cumulative one and not comulative one?

I am not clear about your logic(why apple is 5 and grape is 4, and the cumulative logic)? So if possible could you please explain this to me in details ? Then I will help you more correctly.
