I have a file with these two items Quarter and Week. They're in a date table but I can't find out where it is created since it is not on the source query.

You have a date column, and hierarchy is created for month/quarter/week based on that date column. So physically you just have 1 date column, and in visuals you can drage these hierarchy created columns.
If you want to create physical month/quarter/week in your table, then there are multiple ways, you can use create custom/calculated columns for these.

It makes sense but I created a new table with one date field and set that to a date table but these fields are not added automatically and I don't know how to add them manually

This is due to Auto Date Time which the DAX engine uses.
