Neither option above worked.
Here are some values from the source column (Work_Type_Service_Coverage__c):
APERIO AT - REPAIR - Service Contract
APERIO AT - UPGRADE - SU Warranty
APERIO AT TURBO - APPLICATION SUPPORT - Application Support
The part that we're trying to get at is the middle between the dashes.
