I'd like to give my users the ability to turn on and off certain data sets (values) from my stacked area chart but I don't see a way to do that like with a slicer. The data sets are all just different columns in the same table. I currently have the same chart set up with different data set selections on different pages, but there's too many combinations and I want to simplify. Is there anyway to do this?

You could use bookmark and botton .
Save different combinations in different bookmarks and assign buttons to the bookmarks, and users get different results by clicking different buttons.

And you could try to use Calculation Groups to achieve this.
Calculation groups are supported in tabular models at the 1500 and higher compatibility level.

Also you could test like below:
Due to without your data,I create a sample:
base table:
Then go to the query editor, highlight both column1 ,column2,column3,column4 (shift + mouse click), then click "unpivot columns" in the Transform tab.
Then create vusual and slicer:
