In my matrix I have column headers that show the day of the month in a numeric format, like below. Second screenshot is the format in the Power Query which is the format I hope to show in the column headers. Third screenshot is the format in the Data window.
How can I got about making the column headers show the full mm/dd/yy date?

If you don't need the drill down function, you could try changing the date format.
Select the date column, then under column tools, click Format > Short Date.
Or you could also choose to use the Date instead of Date Heirarchy in your measure (right click on the date, and then make sure Date Heirarchy is not selected)
It looks like you need to remove day from the hierarchy in the columns.
Or drill to that level on the matrix.
When I remove 'Day' as you mentioned it removes the columns from the matrix. How do I drill to that level on the matrix to show the full dates?
