Hi everyone,
I wonder if it is possible to determine which calculated measure we want to show in our matrix dynamically (without needing to go into the data panel on the right) I want my boss to be able to click on the measure he wants to appear on the matrix..
For example I would like him to be able to choose only FOB_CAD and BRUT_CAD to appear in this matrix and all the other columns to hide dynamically

Sounds like you would benefit from creating field parameters in the data model. Check out this short tutorial youtube video about field parameters.
